Vegetarian Meatball

 Vegetarian Meatball 

Ingredients:

  • 1 carrot
  • 1 eggplant
  • 1 potato
  • coriander
  • parsley
  • 1 egg
  • 3 Tb spoon breadcrumbs
  • 2 Tb spoon of flour
  • 5 tomatoes
  • 3 small green chilies
  • salt (according tot taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red chili powder

Method:

Clean and grate carrot, eggplant and potato. 

Finely chop the coriander and parsley. 

Put the grated vegetables in a large bowl. Add parsley and coriander, egg, breadcrumbs, flour, salt, black pepper, chopped green chili, red chili powder and knead.

Note: If mixture is too dry to hold together, then you can add few drops of water or tomatoes paste.

Prepare long flat patties by taking walnut sized pieces from the meatball mixture and shaping them in your hands. 

Cut the tomatoes in half.

Prepare the grill of the oven. Arranged the meatball in greased tray and placed the tomatoes between them.

Cook them for 15 minutes and serve hot.

Not: If oven is not available, then you can fry these meatballs in hot cooking oil.
